Pork Sausage Rigatoni Bolognese

This is a new family favorite recipe of ours, kind of a take off of our family's traditional Italian sausage sandwiches using our Italian sausages, homemade tomato sauce and bell peppers! It is a hit every time we make it!

  1. In a large saucepan heat the olive oil, once heated place the chopped garlic and stir until you can smell the garlic a bit. 

  2. Next place the SWF Italian Sausages into the pan, you remove the casings prior so that you can ground up the sausages making the start of the bolognese sauce. 

  3. Next you add the crushed up roma tomatoes and marinara sauce and stir around. 

  4. Then add the chopped up roasted bell peppers and stir all together. Lastly, add fresh chopped basic to the sauce and allow to simmer all together.
    You want to bring everything to medium heat and simmer while you prepare your pasta, the sauce will thicken naturally, you can stir occasionally.

  5. Fill a large pot with water and bring to a boil, add a touch of salt.  Once at a rolling boil, add the rigatoni and follow the instructions on cook time (usually about 10-12 minutes). 

  6. Once cooked, add a bit of the pasta water to the sauce that is simmering (usually 2-3 spoonfuls), then drain the pasta in a colander and add the pasta to the simmering sauce stirring and lowering the heat to a simmer.  Stir in the pasta and the sauce all together.

  7. Plate, add fresh basil and parmesan to each plate and enjoy!
