Pork St. Louis Ribs with a Winter Spice Rub

INGREDIENTS

  • 2 racks of St. Louis-style ribs

  • 1/4 cup brown sugar

  • 1/4 cup paprika

  • 1 tablespoon black pepper

  • 1 tablespoon salt

  • 1 tablespoon chili powder

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon cayenne pepper

  • 2 cups of your favorite BBQ sauce

Winter Spice Rub

  • 1 tablespoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 1 teaspoon ground cloves

  • 1 teaspoon ground allspice

Note: This recipe is also great for slow cooking. Just place the foil-wrapped ribs on low in your slow cooker for 7-8 hours, then finish under the broiler as above. Enjoy the tenderness and succulent flavors of slow-cooked ribs!

DIRECTIONS

  1. Preheat your oven to 275°F (135°C). Combine all the spices for the rub in a bowl, then rub this mixture all over the ribs, ensuring every bit is covered.

  2. Wrap each rack of ribs in two layers of foil and place them on a baking sheet.
    Bake for approximately 2.5-3 hours, or until the meat is tender and pulls away from the bones easily.

  3. Remove the ribs from the oven and let them rest for a few minutes. Then, carefully remove the foil and apply a generous layer of BBQ sauce all over the ribs.

  4. Turn your broiler to high and place the ribs back in the oven. Broil for 2-3 minutes, or until the sauce is bubbly and starting to caramelize. Be sure to keep a close eye on them to prevent burning.

  5. Let the ribs rest for a few minutes before cutting and serving.
