Winter Money Muscle Roast with Root Vegetables

Brace yourself for an explosion of flavors! Our Winter Money Muscle Roast with Root Vegetables is a delectable treat that's sure to warm up your winter evenings.

 

INGREDIENTS

  • 1.5 kg Money Muscle

  • 2 large potatoes, peeled and quartered

  • 3 carrots, peeled and chopped

  • 2 turnips, peeled and chopped

  • 4 cloves of garlic, minced

  • 2 tablespoons of rosemary, finely chopped

  • 2 tablespoons of thyme, finely chopped

  • 2 tablespoons of olive oil

  • Salt and pepper to taste

DIRECTIONS

  1. Preheat your oven to 375°F (190°C).

  2. Rub the Money Muscle with the minced garlic, rosemary, thyme, salt, and pepper. Make sure the entire surface of the meat is well-coated.

  3. Heat the olive oil in a large oven-safe pan over medium-high heat. Add the Money Muscle and sear on all sides until it develops a beautiful golden brown crust. Remove and set aside.

  4. In the same pan, add the potatoes, carrots, and turnips. Toss them in the oil and seasoning left from the pork and cook for about 5 minutes.

  5. Put the Money Muscle back in the pan, on top of the vegetables. Transfer the pan to the preheated oven and roast for about 1 hour, or until the meat is cooked to your liking and the vegetables are tender.

  6. Let the roast rest for about 10 minutes before slicing. Serve hot with the roasted vegetables.

Note: The cooking time for the Money Muscle may vary based on the size of the meat and your oven. Always use a meat thermometer to ensure it is cooked to your desired doneness.
