Pork and Bean Casserole

This filling dish is not only easy to prepare but also packed with protein. It's the perfect comfort food for cooler days, combining the rich flavors of pork with hearty beans. Let's get cooking!

 

INGREDIENTS

  • 500g pork shoulder, cut into chunks

  • 2 cans of mixed beans (such as kidney, cannellini, and butter beans)

  • 1 large onion, chopped

  • 2 cloves of garlic, minced

  • 1 can of chopped tomatoes

  • 2 tablespoons tomato paste

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Olive oil for frying

  • Fresh parsley for garnish

DIRECTIONS

  1. Preheat your oven to 325°F (160°C). Heat a large, oven-safe casserole dish on the stove over medium heat. Add a drizzle of olive oil.

  2. Add the pork chunks to the dish and brown them on all sides. Once browned, remove the pork and set it aside.

  3. In the same dish, add the chopped onion and minced garlic. Cook until the onion is translucent.

  4. Add the tomato paste, chopped tomatoes, Worcestershire sauce, and paprika to the dish. Stir until all ingredients are well combined.

  5. Return the pork to the dish, add the beans, and stir. Season with salt and pepper.

  6. Cover the dish and place it in the preheated oven. Bake for about 2 hours, or until the pork is tender and the flavors have melded together.

  7. Garnish with fresh parsley before serving.
