DIRECTIONS

  1. Heat a splash of olive oil in a skillet over medium heat. Season the pork butt with salt and pepper, and sear on all sides until it develops a nice crust. Transfer the pork to a slow cooker.

  2. In the same skillet, sauté the onion and garlic until fragrant and slightly golden. Transfer them to the slow cooker.

  3. Add the kidney beans, diced tomatoes, chili powder, cumin, and oregano to the slow cooker. Stir everything together, making sure the pork is covered by the mixture.

  4. Cook on low for 7-8 hours or high for 4-5 hours, until the pork is tender and easily pulls apart with a fork.

  5. Remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the chili and stir well.

  6. Serve your Pulled Pork Butt Chili hot, with a dollop of sour cream and a sprinkle of cheese on top.

  7. We hope that you enjoy this warming bowl of chili, and remember, nothing beats a hearty meal to bring comfort and warmth to your table during these cold winter months.
